Up for a culinary challenge? Don’t look past John McFadden’s World Food Championship winning dish, Prawn & Snapper Ravioli, Pea Purée, Scallops, Salmon Caviar & Prawn Butter.

After making it into the top 5 with his Confit Ocean Trout, Pickled Cucumber, Baby Beets, Nori & Squid Ink dish, John knew he would need to level up his next dish in order to be considered for winning place. In the midst of the competition he remembered the Prawn & Snapper Ravioli dish that he prepared when he was asked to be a Guest Chef at Aarons Wish Charity Dinner. Aaron’s Wish was established by the Lori Family in 2013, in memory of their son Aaron, who lost his brave battle with Brain Cancer earlier that year, and in the memory of many others who have been touched by Brain Cancer.

John donated his time and expertise to be a part of this amazing event and better still had support from Karen Doyle, Adam Moore, industry chefs and students from Le Cordon Bleu. All through his career, John has loved how food is about generosity, it comes from the heart and sustains the soul.
